牡蠣肉的滲透壓會隨季節變化,即便用鹽水洗過,風味跟現剝下來的時候還是會有差異,只有在剝牡蠣時用牡蠣本身含的水份來洗過牡蠣肉才是最『鮮』跟『甜』的,唯一不便之處就是容易有殼,在煮之前於清水中加兩匙鹽洗淨就可以。
